Chicken Breast with Artichoke Hearts
- 3 chicken breasts (or you may use other pieces)
- 1 can chicken broth
- 1 can artichoke hearts,
- Mushrooms, fresh
- ½ can French fried onions
- 1 c white wine
- Brown chicken slowly in butter (do not overcook) remove chicken and place in a baking dish.
- In the frying pan along with remaining butter add 1 can chicken broth, ½ c white wine, and mushrooms (whole or sliced.) Simmer for 5 minutes, pour over chicken.
- Add 1 can artichoke hearts. Sprinkle it with flour.
- Bake @ 350 for 45 minutes,
- Top with ½ can onion rings and continue baking for another 15 minutes.
- Serve with rice.
