Chicken Cordon Bleu

  • 4 T butter
  • 1 c flour
  • 4 boneless, skinless chicken breasts
  • 2 eggs lightly beaten
  • 4 very thin slices ham
  • 2 c bread crumbs
  • 6 oz Swiss cheese
  1. Preheat oven 375.  
  2. Melt butter in a glass baking dish.  
  3. Lightly flatten chicken breasts between plastic wrap with mallet.  
  4. Lay 1 slice of ham and 1 piece of cheese on flattened breast, fold in half and seal closed with toothpicks.  
  5. Coat each roll with flour, then eggs, then bread crumbs. 
  6. Place chicken pieces in the glass baking dish.  
  7. Turn to coat with butter.  
  8. Bake for 40-45 minutes or until golden brown.  
  9. Can also be deep fried until crisp and chicken is done.  
  10. Serve with hollandaise sauce.
