Split Pea & Ham Soup
- 1 lb pkg split peas
- 1 med onion chopped
- 8 c hot water
- 2/3 c chopped celery
- ½ c shredded carrot
- 2 cloves garlic, chopped
- 1-2 lbs ham bones & meat
- 2 bay leaves
- Salt and pepper to taste
- Sort & wash peas in a colander under cold running water.
- Combine all ingredients. Heat to boiling, reduce heat, cover & simmer for 1 ¼ hours or till peas are very soft.
- Remove bones and cut ham into bite size pieces.
- Put soup thru coarse strainer, return ham to pot, reheat & serve. Serve 6-8.
