Split Pea & Ham Soup

  • 1 lb pkg split peas
  • 1 med onion chopped
  • 8 c hot water
  • 2/3 c chopped celery
  • ½ c shredded carrot
  • 2 cloves garlic, chopped
  • 1-2 lbs ham bones & meat
  • 2 bay leaves
  • Salt and pepper to taste
  1. Sort & wash peas in a colander under cold running water.
  2. Combine all ingredients.  Heat to boiling, reduce heat, cover & simmer for 1 ¼ hours or till peas are very soft.  
  3. Remove bones and cut ham into bite size pieces.
  4. Put soup thru coarse strainer, return ham to pot, reheat & serve.  Serve 6-8.
