Shrimp Creole

  • 1 T bacon fat
  • 1  can (8oz) tomato paste
  • 1 lb cleaned, cooked shrimp
  • ¾ tsp. chili powder
  • 1 c chopped onion
  • 1 tsp. dried oregano crushed
  • 2/3 c celery, chopped fine
  • ½ tsp. Creole seasoning
  • 2 cloves garlic, chopped fine
  • 10 oz pkg frozen peas
  • 3 cans (10 ¾ oz) tomato soup
  • salt and pepper to taste
  1. Sauté onion, celery & garlic in bacon fat till tender, but not mushy.
  2. Add tomato soup & tomato sauce & seasonings.  Bring to a boil, cover, reduce heat & simmer for 10-15 minutes stirring occasionally.
  3. Add shrimp & peas, simmer until peas are cooked, stirring occasionally.  
  • Adjust seasonings to taste.  
  • Serve with cooked rice.  
  • Serves 4-6.
