Shrimp Creole
- 1 T bacon fat
- 1 can (8oz) tomato paste
- 1 lb cleaned, cooked shrimp
- ¾ tsp. chili powder
- 1 c chopped onion
- 1 tsp. dried oregano crushed
- 2/3 c celery, chopped fine
- ½ tsp. Creole seasoning
- 2 cloves garlic, chopped fine
- 10 oz pkg frozen peas
- 3 cans (10 ¾ oz) tomato soup
- salt and pepper to taste
- Sauté onion, celery & garlic in bacon fat till tender, but not mushy.
- Add tomato soup & tomato sauce & seasonings. Bring to a boil, cover, reduce heat & simmer for 10-15 minutes stirring occasionally.
- Add shrimp & peas, simmer until peas are cooked, stirring occasionally.
- Adjust seasonings to taste.
- Serve with cooked rice.
- Serves 4-6.
