Everyone has a Lasagna recipe, but this one reminds me of Sunday dinners in Diamond Bar. I think I like the leftover reheated meals even more than the hot ones.

  • 1 lb Italian sausage       
  • 1 extra large jar Prego traditional sauce
  • Barilla no cook lasagna noodles
  • 3 c fresh Ricotta            
  • ½ c grated Parmesan
  • 2 T parsley flakes          
  • 2 beaten eggs
  • 1 tsp. salt            
  • ½ tsp. pepper
  • 1 lb mozzarella cheese, sliced very thin

  1. Brown and crumble sausage in large sauce pan. 
  2. Add sauce after sausage is fully cooked, heat through. 
  3. Mix ricotta, parmesan, parsley, eggs, salt and pepper.
  4. Layer and bake according to pkg directions on noodles.
Not as perfect as Mom made but not bad at all.
