- Bucatini pasta or penne also works if you cant find it
- 8 oz. Parmesan Cheese (Fresh Graded)
- 12 oz. Pancetta or substitute bacon
- 3 Eggs
- A lot of freshly ground black pepper (to taste)
- 3 cloves of garlic minced or finely sliced
- 1/4 cup parsley fresshley chopped
- Boil water and start pasta cooking
- Cook Pancetta in a large pan while pasta cooks
- Drain most of the grease from the pancetta leaving 2 Tbs in pan add garlic and cook to fragrant them remove to low heat.
- Mix 2 egg whites, 3 egg yolks and 3/4 of parmesan in a bowl.
- Drain pasta saving the water and add pasta to the pancetta/garlic in the pan and mix.
- Slowly stir in egg/parmesan mixture to pan and stir to avoid overcooking the eggs. Add pasta water as needed to create a creamy, saucy consitancty.
- Add Pepper, mix in parsley and serve.
This can be served with a dinner salad and garlic bread. Also, add chicken breast or shrimp to increase the protein in the dish.
