Carrot Cake

  • 2 c sugar
  • 1 1/3 c vegetable oil
  • 3 extra-large eggs, at room temperature
  • 1 tsp. vanilla
  • 2 ½ c flour
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 1 ½ tsp. kosher salt
  • 1 c chopped nuts
  • 1 lb grated carrots
  • ½ c diced fresh pineapple
  • 1 c raisins (optional)
  1. Preheat oven 350.  Spray 9×13 pan.
  2. Beat sugar, oil & eggs together in a bowl until light yellow, add vanilla.  
  3. Sift together flour, cinnamon, baking soda, and salt.  
  4. Add dry ingredients to the wet ingredients and mix well, fold in carrots, pineapple, and nuts.  
  5. Bake for 45 minutes or until a toothpick inserted into the middle of the cake comes out clean.  
  6. Cool and frost with Cream Cheese Frosting.
