Carrot Cake
- 2 c sugar
- 1 1/3 c vegetable oil
- 3 extra-large eggs, at room temperature
- 1 tsp. vanilla
- 2 ½ c flour
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 1 ½ tsp. kosher salt
- 1 c chopped nuts
- 1 lb grated carrots
- ½ c diced fresh pineapple
- 1 c raisins (optional)
- Preheat oven 350. Spray 9×13 pan.
- Beat sugar, oil & eggs together in a bowl until light yellow, add vanilla.
- Sift together flour, cinnamon, baking soda, and salt.
- Add dry ingredients to the wet ingredients and mix well, fold in carrots, pineapple, and nuts.
- Bake for 45 minutes or until a toothpick inserted into the middle of the cake comes out clean.
- Cool and frost with Cream Cheese Frosting.
