Cheesecake (low carb)
- 1 (8 oz) pkg cream cheese, softened
- 2 tsp. vanilla
- 1/3 c sugar
- 3 ½ c Cool Whip
- Crushed Grahamcracker for the crust (or preformed pie crust)
- 1 c sour cream
- fruit topping
- Beat cheese until smooth, gradually beat in sugar.
- Blend in sour cream and vanilla.
- Fold in whipped topping, blending well.
- Spoon into crust.
- Chill until set, at least 4 hours.
- Serve topped with fruit.
