Chicken Breast with Artichoke Hearts

  • 3 chicken breasts (or you may use other pieces)
  • 1 can chicken broth
  • 1 can artichoke hearts, 
  • Mushrooms, fresh
  • ½ can French fried onions
  • 1 c white wine
  1. Brown chicken slowly in butter (do not overcook) remove chicken and place in a baking dish.  
  2. In the frying pan along with remaining butter add 1 can chicken broth, ½ c white wine, and mushrooms (whole or sliced.)  Simmer for 5 minutes, pour over chicken.
  3. Add 1 can artichoke hearts.  Sprinkle it with flour.  
  4. Bake @ 350 for 45 minutes, 
  5. Top with ½ can onion rings and continue baking for another 15 minutes.  
  6. Serve with rice.
