Chicken & Broccoli Casserole
- 1 large bunch of fresh broccoli (or frozen)
- 3 chicken breasts (cooked and cut into med pieces)
- 2 cans cream of mushroom soup
- 1 ½ c mayonnaise
- 2/3 c half and half
- 2 tsp. lemon juice
- 1 ½ c shredded cheddar cheese
- ½ tsp. tarragon (more or less to taste)
- 1 can French fried onion rings
- Steam broccoli for a few minutes until it greens up.
- Mix together soup, mayonnaise, half and half, cheese, lemon juice and tarragon.
- Mix with broccoli and chicken and place in a greased 9×13 dish.
- Bake at 350 for 40 minutes, uncovered.
- Sprinkle with onion rings and return to the oven until onions are browned and crisp.
