Cinnamon Sugar Butter Cookies

  • 3 T sugar, 
  • 1 T cinnamon
  • 2 ½ c flour
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1 c brown sugar, packed
  • ½ c sugar
  • 1 c butter
  • 2 large eggs
  • 2 tsp. vanilla
  1. In a small bowl combine sugar & cinnamon for topping & set aside.
  2. In a medium bowl combine flour, soda, and salt.  Mix well with a wire whisk and set aside. 
  3. In a large bowl blend sugars with an electric mixer set at med.
  4. Add the butter, and mix to form a grainy paste. 
  5. Scrape sides of bowl, and then add the eggs and vanilla.  
  6. Mix at medium speed until light and fluffy. 
  7. Add the flour mixture and blend at low speed just until combined. 
  8. Do not over mix.  
  9. Shape dough into 1 inch balls and roll each in the topping mixture. 
  10. Place onto ungreased cookie sheets 2 inches apart.  
  11. Bake for 18-20 minutes.  
  12. Immediately transfer cookies to a flat surface to cool.
