This is a take on one my mom used to make. It’s good and takes very little time to prepare. A great side dish or add chicken to make the main course.

• 2 cups Minute rice
• 1 can cream of mushroom soup
• 1 can cream of chicken soup
• 1 can of water or milk for a creamier result
• 1 envelope Lipton onion soup mix
• 1 lb rotisserie chicken meat (optional)
• ½ cup French’s fried onions (optional)
• ½ cup shredded cheddar cheese (optional)

  1. Preheat oven to 350.
  2. Mix rice, soup, water and soup mix in a mixing bowl and in chunks of cut up rotisserie chicken of cook chicken breast if desired.
  3. Transfer to 9×13 baking dish cover with foil and bake for 45 minutes.
  4. Remove foil and sprinkle with fried onions or cheddar cheese
  5. Bake an additional 10-15 minutes to melt cheese of crisp up the onions.
  6. Let cool for 5 minutes and serve with green vegetables or a side salad.
Made mine with Chicken and Fried Onions.
Sprinkled some chives on top for color.
