Fricassee Chicken (Serve with dumplings)

  1. Cover chicken with hot water.  
  2. Add 2 level tsp. salt & 6 or 8 whole allspice.  
  3. Simmer 2 hours 
  4. Add onion, carrot & celery stalks.  
  5. Cook for another hour.

Sour Cream Gravy

  • ½ pint sour cream
  • 5 T flour
  • ½ tsp. salt
  • ¼ tsp. cayenne pepper
  1. Add 1 c liquid from chicken and vegetables.
  2. In another pan cook 1 ½ c broth & can of mushrooms, combine with sour cream mixture.  
  3. Cook over low heat to thicken.
