Blend together cheese and butter. Add confectioners’ sugar; blend well. Stir in egg and egg yolk. Add flour and mix until just blended.
Shape dough into a ball and wrap in wax paper. Refrigerate overnight or for several hours.
Roll dough on a lightly floured pastry cloth to 1/4” thickness. Cut into 2” squares.
Place a small spoonful of commercial prune or apricot filling in the center of each square. Fold each cookie to the center allowing a bit of the filling to show.
Bake 350 on an ungreased cookie sheet for 20-25 minutes.
