• 1 pkg lemon or white cake mix
  • 1 pkg lemon Jell-O, small
  • 1 lemon & rind
  • 4 eggs
  • ¾ c oil
  • ¾ c water
  1. Mix Jell-O with hot water and cool.  
  2. Add cake mix, eggs, oil and 1 T lemon juice.  
  3. Pour into a greased and floured Bundt pan.  
  4. Bake at 350 for 45-55 minutes, test for doneness with a toothpick, cool 10 minutes and invert on a serving dish.  
  5. Icing:  2 cups powdered sugar and rest of lemon juice.  Prick the top of the cake with a fork so the icing will seep in.  Pour over the cake while it is still hot.
