Lo Carb Enchiladas
- 2 lbs cooked chicken
- 1 (7oz) can diced green chilis
- 2 (8oz) cream cheese, cut into cubes
- 1 (7oz) can chopped black olives
- 1 (13oz) can enchilada sauce
- 2 ¼ c shredded cheddar
- 1 bunch green onions, chopped
- 2 bags low carb tortillas
- Heat oven to 400 degrees.
- Pour just enough enchilada sauce into a 9×13 pan to barely cover the bottom.
- Sauté onions then add chicken, cream cheese, 2 T enchilada sauce, olives and green chilis.
- Cook at medium heat until cream cheese is melted and all ingredients are mixed well.
- If tortillas are not pliable, heat in a small amount of oil. Place 2 T chicken mixture on each tortilla, roll and place snugly in the pan.
- Cover with enchilada sauce and cheese and bake for 15-20 minutes.
- 5.5 carbs per serving.
