Lo Carb Enchiladas

  • 2 lbs cooked chicken
  • 1 (7oz) can diced green chilis
  • 2 (8oz) cream cheese, cut into cubes
  • 1 (7oz) can chopped black olives
  • 1 (13oz) can enchilada sauce
  • 2 ¼ c shredded cheddar
  • 1 bunch green onions, chopped
  • 2 bags low carb tortillas
  1. Heat oven to 400 degrees.  
  2. Pour just enough enchilada sauce into a 9×13 pan to barely cover the bottom.  
  3. Sauté onions then add chicken, cream cheese, 2 T enchilada sauce, olives and green chilis.  
  4. Cook at medium heat until cream cheese is melted and all ingredients are mixed well.  
  5. If tortillas are not pliable, heat in a small amount of oil.  Place 2 T chicken mixture on each tortilla, roll and place snugly in the pan.  
  6. Cover with enchilada sauce and cheese and bake for 15-20 minutes.  
  7. 5.5 carbs per serving.
