Pigs in the Blanket

  • 1 tube (12 oz) Farmer John Original Sausage per person
  • 1 c Minute Rice (un-cooked) for each tube of sausage
  • For every 4 tubes of sausage use:
    • 1 large head cabbage
    • 1 large jar sauerkraut
  1. Mix sausage and rice together.  Form into an egg shaped meatball, about 1/3 c each and then roll up into a cabbage leaf that has been blanched so it is pliable.  Roll it like a burrito tucking the ends as you go.
  2. Stack into a large stock pot.  Cover with sauerkraut.  Add about ½ c water, cover and simmer until done, about 1 ½ – 2 hours depending on how many are in the pot.  Once they start to simmer there will be plenty of liquid in the pot but watch it until then to be sure it doesn’t start to burn.
  3. I always serve with homemade rolls, hot buttered mashed potatoes and a fruit or Jell-O salad.
