• ¾ c plus 2 T packed light brown sugar
  • 1 large egg
  • 2 tsp. vanilla extract
  • 8 T unsalted butter, melted
  • 1 ½ c flour
  • ½ tsp. baking soda
  • 1/8 tsp. salt
  • 1 c chopped pecans, toasted
  • 4 oz white chocolate, chopped or ¾ c white choc. Chips
  1. Beat together the sugar and egg until light and fluffy, about 3 minutes.  
  2. Add the vanilla and butter and beat to mix well. 
  3. In a small bowl, stir together the flour, baking soda and salt and add to the butter mixture, beating until just incorporated.  Do not over mix.  
  4. Using a spoon, stir in pecans and white chocolate.  
  5. Spoon into an 8” greased pan and bake for 25 – 30 minutes at 325 until the top is dry and golden and a knife inserted in the center comes out with just a few crumbs attached.  Don’t over bake.  
  6. Cool
