Pumpkin Pie Dessert Squares

Crust:

  • 1 pkg Pillsbury yellow cake mix
  • 1 egg                                  
  • ½ c butter

Filling:

  • 2 eggs                              
  • 1 ¾  tsp. pumpkin pie spice
  • 1 (16oz) can pumpkin          
  • ½ tsp. salt
  • ¾ c sugar                           
  • ⅔ c evaporated milk

Topping:

  • 1 c reserved cake mix        
  • 1 tsp. cinnamon      
  • ¼ c butter

  1. Preheat the oven to 350.  
  2. Reserve 1 c of cake mix for topping.  
  3. Combine remaining cake mix, butter and egg.  
  4. Press into a 9×13 pan that has been greased or sprayed with non-stick spray.  
  5. Blend all filling ingredients together and pour over the crust. 
  6. Combine topping ingredients; sprinkle over filling.  
  7. Bake for 45-50 minutes or until a knife inserted in the center comes out “fairly” clean. Don’t over bake.  
  8. Good with whipped cream.
