Crust:
- 1 pkg Pillsbury yellow cake mix
- 1 egg
- ½ c butter
Filling:
- 2 eggs
- 1 ¾ tsp. pumpkin pie spice
- 1 (16oz) can pumpkin
- ½ tsp. salt
- ¾ c sugar
- ⅔ c evaporated milk
Topping:
- 1 c reserved cake mix
- 1 tsp. cinnamon
- ¼ c butter
- Preheat the oven to 350.
- Reserve 1 c of cake mix for topping.
- Combine remaining cake mix, butter and egg.
- Press into a 9×13 pan that has been greased or sprayed with non-stick spray.
- Blend all filling ingredients together and pour over the crust.
- Combine topping ingredients; sprinkle over filling.
- Bake for 45-50 minutes or until a knife inserted in the center comes out “fairly” clean. Don’t over bake.
- Good with whipped cream.
