• 2 (10 oz) frozen chopped spinach
  • 2 (8 oz) cream cheese
  • ½ c grated parmesan cheese
  • ½ c cheddar cheese
  • 1 small jar artichoke hearts
  • ½ c milk
  • 2 eggs
  • salt & pepper to taste
  • Dirkie’s fried onion rings
  1. Thaw and drain spinach.  
  2. Cream cheddar cheese and cream cheese together; add milk, eggs, seasonings and combine mixture to spinach.  
  3. Over low heat add grated cheese (1/4 cup) and combine to mix well.  
  4. Grease dish drain and arrange artichokes on bottom, pour in spinach mixture, top with remaining parmesan cheese and onion rings.  
  5. Bake 350 for 20 minutes covered, last 10 minutes uncovered, total cooking time 30 minutes.
