- 2 (10 oz) frozen chopped spinach
- 2 (8 oz) cream cheese
- ½ c grated parmesan cheese
- ½ c cheddar cheese
- 1 small jar artichoke hearts
- ½ c milk
- 2 eggs
- salt & pepper to taste
- Dirkie’s fried onion rings
- Thaw and drain spinach.
- Cream cheddar cheese and cream cheese together; add milk, eggs, seasonings and combine mixture to spinach.
- Over low heat add grated cheese (1/4 cup) and combine to mix well.
- Grease dish drain and arrange artichokes on bottom, pour in spinach mixture, top with remaining parmesan cheese and onion rings.
- Bake 350 for 20 minutes covered, last 10 minutes uncovered, total cooking time 30 minutes.
