Green Onion Potato Salad

  • 2 lbs red potatoes
  • 2 tsp. salt
  • 1 T & 2 tsp kosher salt
  • ¼ tsp. black pepper
  • 1 ¼ c mayonnaise
  • ¼ c cilantro, chopped
  • 6 green onions, sliced thinly
  • 2 T white wine vinegar
  • 2 jalapeno peppers, chopped
  1. Cover potatoes with water in a 4 quart sauce pot.  Bring to a boil over medium high heat.  Add 1 T salt, reduce heat to low and simmer for 10 minutes or until potatoes are tender.
  2. Drain and cool slightly then Slice them. 
  3. Combine mayo, vinegar, peppers, salt and pepper in a large bowl.
  4. Stir in remaining ingredients and toss gently.
