- 2 lbs red potatoes
- 2 tsp. salt
- 1 T & 2 tsp kosher salt
- ¼ tsp. black pepper
- 1 ¼ c mayonnaise
- ¼ c cilantro, chopped
- 6 green onions, sliced thinly
- 2 T white wine vinegar
- 2 jalapeno peppers, chopped
- Cover potatoes with water in a 4 quart sauce pot. Bring to a boil over medium high heat. Add 1 T salt, reduce heat to low and simmer for 10 minutes or until potatoes are tender.
- Drain and cool slightly then Slice them.
- Combine mayo, vinegar, peppers, salt and pepper in a large bowl.
- Stir in remaining ingredients and toss gently.
